It seems to me that since he quit a few years ago, the likelihood is that you're getting older and are becoming progressively more aware of his behaviors and that your father is getting older. When people get older, their character traits and bad habits tend to get worse and more extreme. While in the short term, your boyfriend will likely become irritable and cranky due to nicotine withdrawl, I doubt the changes will be long lasting or permanent. Be patient with him and supportive and everything will be alright.

Look at the sources I listed below for more info.
References :
http://www.quittersguide.com/withdrawal-symptoms.shtml

Stopping someone from smoking causes their body to have withdrawal symptoms. This usually includes aggression, anxiety, impatience, loss of appetite and hyperactivity.

Whether your boyfriend would change his attitude towards you, depends on his character. Does he have a strong backbone and is very self aware of the changes around him? Or is he the type to be easily influenced by the crowds?(Such people are less self aware and may change without knowing).
References :
This is a good question. My boyfriend smokes too and whenever he is around me he doesnt have the urge to. Its what they do when they are stressed out so maybe if he finds some other way to relieve stress he wont change. Quitting is a very hard thing, but my father quit smoking for my stepmom many years ago and hes fine.
References :
People that quit cold turkey are more apt to have their personality affected. If one feels deprived after quitting, they are more likely to be grouchy, so it helps if they have a true desire to reap the benefits of quitting rather than feeling they have quit just in order to please others. I recommend using behavior modification techniques that deal with the mental aspects of the habit as well as the physical ones. I can't really understand how someone's ideas would change except as they relate to health issues.
References :
Smoking calms people, if they are forced to quit and smoked a lot they will get quite irritable and short tempered.
Those that were occasional ie social smokers don't get that way they can substitute with alcohol or candy.
References :
first of all FYI its "quit". second of all, nicotine is a pretty strong chemical. they are dependent on it. it will "change" him temporarily, as with any rebound, you are aggressive because you feel you need something. but eventually, he will go back to normal and even be happier because he doesn't have to worry about cigarettes. encourage him to do it!
